The skirt cut of meat comes from the belly of the steer, which creates a lean steak that is wonderful when cooked properly. Undercooking creates a chewy texture, and overcooking will make it tough. We recommend cooking it medium (internal temp of about 145 degrees). It is also excellent for fajitas and stir-fry!
